2 1/2 call purpose flour

1 1/2 tspbaking soda

1 tspground cinnamon

1/2 tspground cloves

1/8 tspground nutmeg

1/4 tspsalt

1 cbrown sugar

2 Tbspprepared dark coffee

1/4 cmolasses

1/4 cwhite sugar

3/4 cunsalted butter softened
How To Make soft gingerbread cookies

1In a medium bowl and combine flour, ground ginger, baking soda, ground cinnamon, ground cloves, ground nutmeg and salt. Set aside.

2Using mixer cream butter and brown sugar until light and fluffy. Stir in egg, coffee and molasses. Slowly blend flour mixture into butter mixture until incorporated; scraping down bowl and beaters. Shape dough into one inch balls and roll through white sugar.

3Place on parchment covered baking sheets one inch apart. Bake for 12-14 minutes. After 5 minutes move to cookie cooling racks.
