soft batch molasses cookies

Molasses cookies are one of my all time favorites. I like them soft with plenty of spice. These cookies will remind you of autumn and the holiday season. They would be perfect for gift giving, just double or triple the recipe. I hope you enjoy these as much as I do. Other than measuring out the multiple ingredients, they are really quite easy to make.

Ingredients For soft batch molasses cookies

  • 3/4 c
    unsalted butter, softened
  • 2/3 c
    white sugar
  • 1/3 c
    dark brown sugar
  • 1 lg
    egg
  • 1/2 tsp
    salt
  • 1 tsp
    baking soda
  • 1 1/4 tsp
    cinnamon
  • 1 1/4 tsp
    ground ginger
  • 1/4 tsp
    allspice
  • 1/8 tsp
    ground cloves
  • 2 pinch
    black pepper
  • 1 1/2 Tbsp
    heavy cream
  • 3 Tbsp
    molasses
  • 2 tsp
    bourbon, brandy, or rum
  • 2 1/4 c
    all purpose flour
  • turbinado sugar, for rolling dough balls in before baking

How To Make soft batch molasses cookies

    In a large bowl, beat butter with sugar. Add egg and salt, baking soda, and spices. Beat until well blended. Add liquids, cream, molasses and liquor. Blend well. Stir in flour and mix well.

    Shape 1 3/4 inch balls of dough. Roll in turbinado sugar. Place 8 to a sheet. Bake at 350 degrees for about 14 minutes.

    Cool on rack. Store airtight. Makes 20 cookies.
