This is a classic cookie recipe found in most cookbooks, but with a little "Lynn" twist.

At Christmastime when all the treats tend to be super sweet, it's nice to have a lightly sweet cookie. We love snowballs with their buttery shortbread, pecan flavor and a dusting of powdered sugar. Putting chocolate chunks in the center is a sweet surprise. We're pretty sure Santa (plus your family and friends) will love these.

Ingredients For snowball surprise

  • 1 c
    real butter unsalted; softened
  • 1/2 c
    powdered sugar; sifted
  • 1 Tbsp
    water
  • 1 tsp
    vanilla
  • 2 c
    all-purpose flour; sifted
  • 1/2-1 c
    pecans; finely chopped, opt
  • 1 pkg
    chocolate chunks
  • 1 c
    powdered sugar for coating

How To Make snowball surprise

  • Creaming butter and powdered sugar.

    Cream softened butter. Add 1/2 c powdered sugar. Beat until combined; scraping bowl.
  • Adding vanilla to batter.

    Beat in water and vanilla.
  • Adding flour to batter.

    Beat in as much flour as you can.
  • Stirring in pecans.

    Then stir in any remaining flour, stir in pecans.
  • Shaping dough into circles.

    Shape dough into 1" balls (heaping teaspoonful).
  • Poking a hole in the cookie.

    Poke hole in the center with a fingertip.
  • Inserting chocolate chunks.

    Insert 2-3 chocolate chunks.
  • Shaping dough around chocolate chunks.

    Push dough up and over chocolate. Roll ball in your hand to seal.
  • Cookies placed on a cookie sheet.

    Place 1" apart on ungreased cookie sheet.
  • Snowball cookies out of the oven.

    Bake 325 degree for 15 min or until bottoms are lightly browned.
  • Snowball cookies cooling on a wire rack.

    Let cool.
  • Coating cookies with powdered sugar.

    Once cooled, gently shake cookies in Ziploc bag with 1 c powdered sugar.
