There are lots of snickerdoodle recipes. I originally found this one in The Beverly Lewis Amish Heritage cookbook, but have tweaked it a bit to fit my family's tastes. The original recipe says that this makes 3 dozen cookies.......but I guess I make mine larger and only get about 1/2 of that.

Ingredients For snickerdoodles

1/2 cbutter, softened

3/4 csugar

1egg

1 3/4 cflour, sifted

1 tspcream of tartar

1/2 tspbaking soda

1/4 tspsalt
- CINNAMON-SUGAR MIXTURE:

1/2 csugar

2 Tbspcinnamon
How To Make snickerdoodles

1Mix together butter, sugar, and egg.

2Sift together flour, cream of tartar, soda, and salt; stir into creamed mixture. Chill dough for 1 hour.

3Roll into balls the size of small walnuts.

4Combine sugar and cinnamon; roll balls in mixture. Place cookies 2-3 inches apart on ungreased baking sheets.

5Bake at 400 degrees until lightly browned, approximately 6-8 minutes. (Cookies puff up at first, then flatten out with a crinkled top).
