These cookies are extra special and the almond paste makes them sweet and dense. These are very tasty and can be made in 7x11-inch baking pan. If you like almond cookies you will love these bars from 1952.

Ingredients For royal almond bars-circa-1952

  • BARS:
  • 1 1/2 c
    butter or shortening
  • 1/2 c
    granulated sugar
  • 2 lg
    egg yolks, beaten
  • 1/4 tsp
    almond extract
  • 1 1/4 c
    cake flour
  • 1/2 tsp
    salt
  • 1 tsp
    baking powder
  • 2 Tbsp
    water
  • TOPPING:
  • 1 lg
    egg white, beaten stiff
  • 1 c
    brown sugar, sifted
  • 1 c
    slivered almonds
  • directions
    beat the egg,until stiff. fold in brown sugar.spread over unbaked bars and sprinkle with nuts. bake at 325^ for 30 minutes.
  • ALTERNATE TOPPING:
  • 1/2 c
    almond paste
  • 1/4 c
    granulated sugar
  • 2 lg
    egg whites, beaten stiff
  • directions
    work the almond paste and sugar together and combine with the stiffly beaten egg whites. cover baked bars with mixture and bake until the topping is firm and lightly colored. remove from oven and let cool slightly. cut into bars and place on a rack

How To Make royal almond bars-circa-1952

    Heat oven to 325^. Grease a 7x11-inch baking pan or glass dish. Set aside. --- BARS: Cream the shortening and sugar together, add the egg yolks which have been beaten until stiff and lemon colored, add the almond extract.

    Sift the flour, salt and baking powder together and add alternately with the water to the creamed mixture. Spread in prepared pan. Set aside and make topping you desire.
