These cookies are breakfast in your hand, with oats,nuts,fruit and Bacon! I made these for the bacon loving guys at my job and they hung around the plate with their coffee singing their praises! Definitely not a cookie to take to your office when there is work to be done. For vegetarians omit the bacon, they are still delicious!

Ingredients For rock and rise ranger cookies

1 cup margarine

2 cup brown sugar

2 eggs

1 tsp vanilla

1/2 tsp salt

2 tbs baking soda

1 cup coconut
-
1 cup chopped walnuts

2 cup oats
-
2 cups rice krispies
-
1/2 cup dried cranberries
-
1 cup chocolate chips
-
1/4 cup crumbled crisp cooked bacon
How To Make rock and rise ranger cookies

1Mix all dry ingredients in a large bowl. Except cereal, cranberries, nuts, bacon, and chocolate chips. Set aside.

2In a mixer bowl cream butter, sugar, eggs and vanilla. With the mixer running add flour/oats mixture a little at a time until incorporated. Add nuts, chocolate chips, cranberries, rice cereal and bacon. Dough will be stiff.

3Shape into golfball sized balls and place 3" apart on greased cookie sheets. Press flat with a fork. Bake at 375° oven for 8 to 11 minutes or until lightly browned. Allow to cool slightly and remove to wire racks to cool completely. Grab a cup of coffee and dunk!
