roasted peanut butter cookies

This PB cookie recipe is my favorite :) I've tried the 3 ingredient Kraft recipe but nothing beats the taste and texture of an old fashion cookie recipe :) I hope you will enjoy them as much as we do :)

Ingredients For roasted peanut butter cookies

  • 2 c
    flour
  • 1/2 tsp
    baking powder
  • 3/4 tsp
    baking soda
  • 1 c
    butter, softened
  • 1 c
    brown sugar, firmly packed
  • 1 c
    white sugar
  • 1 1/2 c
    crunchy or regular peanut butter (i used crunchy :)
  • 3
    small eggs
  • 1 tsp
    pure vanilla extract
  • 3/4 c
    roasted salted peanuts (ground in food processor until it looks like bread crumbs)

How To Make roasted peanut butter cookies

    Preheat oven to 350 degrees. Sift flour, baking soda, baking powder, and salt in medium bowl.

    In large bowl with electric mixture (or by hand) beat butter until creamy. Add sugars; beat until fluffy, about 4 minutes (scrape sides down), beat in peanut butter until fully mixed, then eggs, one at a time, then vanilla. Gently stir dry ingredients into peanut butter mixture. Add ground peanuts; stir gently until just mixed

    Scoop dough with a tablespoon, roll into balls, placing them 2 inches apart on a parchment covered cookie sheet. Press each dough ball with a fork dipped in cold water to make crisscross design.

    Bake until cookies are puffed and slightly brown along edges, but not top, 8-10 minutes (they will not look fully baked but they do continue to bake on the cookies sheet!). Cool cookies for a good 5 minutes before transferring them to wire rack to cool completely. You can store the cookies in an airtight container, up to 7 days. :)
