Ingredients For rhubarb bars

  • 1 1/2 c
    flour
  • 3/4 c
    butter, room temperature
  • 1/2 c
    confectioners sugar
  • 1- 8 oz
    bar of cream cheese
  • 1 1/2 c
    regular sugar
  • 1/4 c
    flour
  • 1/4 tsp
    salt
  • 1
    egg
  • 2 c
    diced rhubarb

How To Make rhubarb bars

  • 1
    Mix first 3 ingredients into crumbs. Reserve 1/2 cup of crumbs for topping. Press remaining crumbs into a 9x13 pan sprayed with cooking spray. Bake 10 minutes.

    While crust is baking, beat the next 5 ingredients till smooth. Add diced rhubarb. Pour over baked crust and sprinkle reserved crumbs over top. Bake 40 minutes more. Refrigerate and enjoy!
