The phone rang and I answered, "Hello." "Hi Sis! We're in town for the day and we will be there in 30 minutes. Put the coffee on." "OK" I say, "Can't wait to see you." It's happened to all of us and usually when you don't have a thing to go with the coffee. This is my emergency recipe. I try to keep the makings hidden in the back of the cupboard all the time.

How To Make rescue me (emergency cookies)

1Break crackers to the size you want and brush off crumbs.

2In a small microwave safe bowl melt almond bark. I do it one minute at a time in mine but microwaves are different so check yours out. Mine takes about 2 minutes.

3Remove every 30 to 60 seconds and test to see if it is melted. Stir and drop in 6 or so chocolate chips and cover just enough to melt them. Draw a knife through them to create ribbons of color.

4Press a graham cracker lightly into the almond bark and lift out. Gently draw knife along the bottom to stop drips. Then pull the knife gently in opposite direction to create a design. Allow to dry on a rack until almond bark sets up. About five minutes.

5Put on a pretty plate and serve with coffee, tea or cookies. My company usually thinks I bought them until I tell them my secret.
