The phone rang and I answered, "Hello." "Hi Sis! We're in town for the day and we will be there in 30 minutes. Put the coffee on." "OK" I say, "Can't wait to see you." It's happened to all of us and usually when you don't have a thing to go with the coffee. This is my emergency recipe. I try to keep the makings hidden in the back of the cupboard all the time.

  • graham crackers
  • vanilla almond bark
  • chocolate chips

How To Make rescue me (emergency cookies)

    Break crackers to the size you want and brush off crumbs.

    In a small microwave safe bowl melt almond bark. I do it one minute at a time in mine but microwaves are different so check yours out. Mine takes about 2 minutes.

    Remove every 30 to 60 seconds and test to see if it is melted. Stir and drop in 6 or so chocolate chips and cover just enough to melt them. Draw a knife through them to create ribbons of color.

    Press a graham cracker lightly into the almond bark and lift out. Gently draw knife along the bottom to stop drips. Then pull the knife gently in opposite direction to create a design. Allow to dry on a rack until almond bark sets up. About five minutes.

    Put on a pretty plate and serve with coffee, tea or cookies. My company usually thinks I bought them until I tell them my secret.
