Ingredients For red velvet cookies

  • 2 1/2 c
    flour
  • 1/4 c
    unsweetened cocoa powder
  • 1 1/4 tsp
    baking soda ( use 1 teas for high altitude)
  • 3/4 tsp
    salt
  • 1/2 tsp
    cinammon, ground
  • 1 c
    butter, unsalted, softened
  • 1/3 c
    packed brown sugar
  • 2
    eggs
  • 1 oz
    bottle red food coloring
  • 1 tsp
    vanilla extract
  • 1/2 tsp
    lemon juice, fresh
  • 4 oz
    cream cheese, room temperature
  • 1/4 c
    butter, softened
  • 1 tsp
    vanilla extract
  • 2 1/2-3 c
    powdered sugar
  • chopped pecans
  • 1 c
    granulated sugar

How To Make red velvet cookies

    Heat oven to 350 In bowl combine flour, cocoa, baking soda, salt and cinnamon. Set aside. In large bowl beat butter until light and fluffy ( about 2-3 minutes). Beat in sugars until smooth. Add eggs, food coloring, vanilla and lemon juice. Beat until combined, then add flour mixture a little at as time until its all combined. Drop dough by tablespoonfuls onto ungreased cookie sheet about 1 1/2 inches apart. Bake at 350 for 10-12 minutes until edges are set but centers are still soft. Cool completely on wire racks. Once cool, frost with cream cheese frosting. Can sprinkle chopped pecans and/or colored sugars on top for a festive look.

    Frosting: Beat cream cheese, 1/4 cup butter and 1 teas vanilla until light and fluffy. Gradually add powdered sugar till you get desired spreading consistency. Frost the cool cookies
