Please note: these lovely cookies are not overly sweet. The raisins and sweet lemon syrup help to sweeten these tasty treats. The ground walnuts add another layer of flavor and a nice texture to the cookies.

Ingredients For raisin cookies

1 cvegetable or virgin olive oil

1/2 cfresh squeezed orange juice

1 tsppure vanilla extract

3 cflour

1 Tbspbaking powder

1/2 tspbaking soda

2 Tbspwhite sugar

1/2 - 3/4 craisins
- SYRUP

1 csugar
-
2 cwater
-
1 - 2 tsplemon juice
How To Make raisin cookies

1Preheat oven to 350 F.

2Cookies: In a large bowl add orange juice, oil and vanilla extract. In another bowl, add the dry ingredients and mix well. Now, slowly add the orange juice mixture to the flour mixture until a soft, moist dough forms. If necessary add more flour.

3To assemble, press some of the raisins into the middle of the dough and roll into 1 1/2 inch balls.

4Place the cookies on a sheet and bake in a 350 oven for 20 - 25 minutes.

5Syrup: In a small pot add all the syrup ingredients. Bring to a rapid boil and boil until it thickens into a syrup. Dip the cooled cookies into the syrup. Next, press the top of the cookie into the ground walnuts, and let dry on a rack. Enjoy
