The first time I made these I was hooked, so delicious and even the kids ate them up proving that sometimes you can disguise healthy ingredients in a cookie!

Ingredients For quinoa coconut cookies

1/3 cbutter, softened

1/3 cpeanut butter

2eggs

1 tspvanilla

3/4 cbrown sugar, firmly packed

1 1/2 call purpose flour

1/2 cshredded unsweetened coconut

1 tspbaking powder

1/4 tspbaking soda

1 1/2 cquinoa, cooked

1 cchocolate chips
How To Make quinoa coconut cookies

1Beat together butter. peanut butter, eggs, vanilla and sugar until smooth

2In another bowl, combine the flour, coconut, baking powder and baking soda. Add the dry ingredients to the peanut butter mixture and mix until smooth. Still in the Quinoa and chocolate chips.

3Drop spoonfuls of cookie dough onto greased cookie sheet. Bake at 375 degrees for 9 minutes or until edges are golden

4Cool on cookie rack
