quick iced oatmeal cookies
I've been making these cookies since my daughter was a little girl, ( many years ago, lol,) I had gotten the original recipe from a Better Homes and Garden cookbook my aunt had given me. Over the yrs, I have made changes and this is the best recipe so far.

Ingredients For quick iced oatmeal cookies

1 stickplus 6 tbsp soft butter

2 lgeggs

1 clight brown sugar

1/2 cwhite sugar

1 tspvanilla extract

1-1/2 call purpose flour

1 tspbaking soda

1 pinchsalt

1-1/2 tspground cinnamon

3 cquick cooking oatmeal, i used quaker brand

1 csun maid raisins
-
1 cancream cheese frosting
How To Make quick iced oatmeal cookies

1Heat oven to 350. Line cookie sheets w/ parchment paper. In a large bowl, beat butter and both sugars until creamy. Beat in eggs and vanilla.

2In another bowl, whisk together the flour, baking soda, salt and cinnamon. Slowly pour the flour mix into egg mix and beat just until combined,

3Add the quick cook oats and raisins into the mix and with clean hands mix it up real good. Using a tablespoon, scoop up the mix by tbsp and shape into rounds. Set them on the paper, 2" apart. Bake for 8-10 minutes or until very light golden brown. Watch very carefully since they can burn easy. :let cool. I spoon 1/2 the frosting into a microwave safe bowl, microwave 10 seconds or until just a little melted. Spoon over the cookies. Let set.
