Most people love a good snickerdoodle... well that's never been a favorite of mine and one day was thinking... (I know, look out, Wendy's thinking again!) But this time came to a wonderful result! And now this cookie is one of my most requested best sellers!

We love snickerdoodle cookies and this is a nice twist on a classic cookie. Adding pumpkin spice instead of cinnamon is pure genius and gives the cookie a fall feel. This pumpkin pie snickerdoodle is slightly crisp on the outside, soft and chewy on the inside. Yum!

Ingredients For pumpkin spice snickerdoodles

  • 1/2 c
    butter, softened
  • 1/2 c
    shortening, I use butter flavor Crisco
  • 1 1/2 c
    sugar
  • 2 lg
    eggs
  • 3 c
    all-purpose flour
  • 2 tsp
    cream of tartar
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 tsp
    pumpkin pie spice (if you don't have this on hand, there couple recipes for it on the site)
  • 1/2 c
    sugar
  • 1 Tbsp
    pumpkin pie spice, amount depends on how spicy you like it

How To Make pumpkin spice snickerdoodles

  • Butter, shortening, and sugar creamed together.

    Cream together butter, shortening and sugar until fluffy.
  • An egg added to the bowl.

    Add egg and mix well.
  • Sifting dry ingredients together.

    Sift together then add flour, tartar, soda, salt, 1 tsp of pumpkin pie spice.
  • Blending ingredients together.

    Blend well. It may seem crumbly but it will come together into a nice dough (just takes a few minutes sometimes).
  • Pumpkin spice sugar in a bowl.

    Mix the 1/2 c of sugar with 1 Tbsp of pumpkin pie spice in a bowl and set aside for rolling dough balls in. Amount of sugar to spice just depends on your liking. Start with 1 Tbsp pumpkin pie spice for the first pan, if you'd like more spice add more to the sugar.
  • Scooping cookie dough.

    Roll dough into 1 1/2" balls or walnut size.
  • Rolling dough ball in sugar.

    Then roll in sugar and spice mixture.
  • Flattening the cookies.

    Place on a parchment paper-lined cookie sheet and flatten slightly with the bottom of a glass.
  • Snickerdoodles baking in the oven.

    Bake at 375 for 9-11 minutes.
  • Snickerdoodles on a cooling rack.

    Remove from pan right away to cool on wire racks.
  • A bite taken out of a Pumpkin Spice Snickerdoodle.

    *This is one of those cookies that is best right out of the oven (as is any cookie, lol) or after being stored in an airtight container a few hours. ENJOY!!!
