A family recipe, passed from hubby's Grandmother. This recipe is a nice variation on pumpkin pie, served as a bar instead - great served slightly warm, topped with whipped cream.

Ingredients For pumpkin pie squares

1 cflour
-
1/2 crolled (quick) oatmeal

1/2 cbrown sugar, firmly packed

1/2 cbutter or margarine

1 canpumpkin (1 lb)

1 canevaporated milk

2eggs
-
1/2 tspginger powder
-
1/2 tspsalt
-
1 tspcinnamon, ground

1/4 tspcloves, ground

3/4 csugar
-
1/2 cpecans, in pieces

1/2 cbrown sugar, firmly packed

2 Tbspbutter, melted
How To Make pumpkin pie squares

1Preheat oven to 350

2Combine flour, oats, 1/2c brown sugar and 1/2c butter. Mix well until crumbly, using electric mixer on low.

3Press into un-greased 9x13 pan.

4Bake @350 for 15 minutes.

5Combine pumpkin, milk, eggs, white sugar and seasonings. Mix well.

6Pour pumpkin mixture over crust. Return to oven @350 for 20 minutes.

7Meanwhile, prepare topping: pecans, 1/2c brown sugar and 2 TBS butter. Mix with fork until crumbly. Sprinkle over bars and return to oven @350 for 15-20 minutes. The topping is optional, but remember to add the additional cooking time if you do not add the topping.

8Cool to desired serving temp. Or refrigerate until ready to serve. Cut into squares. Serving # will depend on how big you cut them.
