Saw some of these on line and thought I could create my own version, using my already yummy Spicy Molasses Cookie recipe...and so I did and they were a hit yesterday with family!!! They are really soft and super good!!! :o)

Ingredients For pumpkin molasses cookies

1/2 cbutter, softened

1/2 c100% pumpkin, canned or cooked

1/2 cbrown sugar, dark if you have it

1/2 csugar

1egg
-
1/4 cmolasses

2 1/2 cflour
-
2 tspbaking soda

1/2 tspsea salt
-
1 tspcinnamon
-
3/4 tspall spice

3/4 tspginger
-
1/4 tspcoarse black pepper
- FOR ROLLING:

1/2 csugar

1 tsppumpkin pie spice
How To Make pumpkin molasses cookies

1Cream together butter, pumpkin, sugars, egg and molasses until creamy. Add dry ingredients and blend well.

2Mix together 1/2 c sugar and pumpkin pie spice in small bowl. This dough will be really soft, roll into balls, or use cookie scoop, roll in sugar mixture, place onto cookie sheets, flatten slightly with bottom of a glass or palm of hand.

3Bake at 350 for 11-13 minutes . Mine were large, I used a 1/4 c size scoop and I baked for 15 minutes.
