Still hunting out pumpkin cookie recipes, since mine is misplaced. This one is from Allrecipes as well as the first one I posted. Don't over beat this recipe, in order to keep it from being fluffed-up like cake. THERE ARE NO EGGS IN THIS RECIPE.

1/2 cshortening

1 cwhite sugar

1 cpumpkin puree

1 tspvanilla extract

2 call-purpose flour or unbleached all-purpose flour

1 tspbaking powder
-
1/4 tspsalt
-
1 tspbaking soda

1 tspground cinnamon
-
1 1/2 cbutterscotch chips (i will use less chips and sometimes vanilla ones.)

other add-ins: raisins, dried cranberries, nuts, other flavor chips or other spices
How To Make pumpkin cookies i (not cakey)

1Preheat oven to 350°F. Grease cookie sheets.

2In a medium bowl, cream shortening and sugar with mixer, but don't over beat. Stir in pumpkin and vanilla with a spoon. And, continue with the spoon.

3Sift together dry ingredients; stir into the creamed mixture. Then, mix in the butterscotch chips. Drop dough by teaspoonfuls, onto prepared cookie sheets.

4Bake 8-10 minutes. Allow cookies to cool for a minute on cookie sheets, before transferring to wire cooling racks. Makes 3 dozen.
