This is my Aunt Brenda Meyers' recipe... A couple of years my aunt came in to our house on a Saturday before Christmas and we baked many kinds of Christmas cookies. This became a favorite of ours....The texture is cake like and very soft. The nuts and raisins are excellent in them, but they are yummy without them as well.

Ingredients For pumpkin cookies

2 cflour
-
1 tspsalt

1 tspbaking powder

1 tspbaking soda

1 tspcinnamon

3/4 cshortening
-
1 cgranulated sugar

1egg
-
1 ccanned pumpkin
-
1 tspvanilla extract
-
1/2 cchopped walnuts (optional)

1/2 craisins (optional)
- FROSTING INGREDIENTS

3 Tbspmelted margarine or butter
-
1/2 cbrown sugar, firmly packed

6 Tbspmilk
-
1 lbpowdered sugar
How To Make pumpkin cookies

1Heat oven to 375 degrees. Sift together flour, salt, baking powder, baking soda, cinnamon. Set aside.

2Cream shortening and add granulated sugar, and cream.

3Add egg and pumpkin to the shortening and sugar and mix well. Add walnuts and raisins if desired.

4Add flour mixture and mix well.

5Drop by teaspoonfuls unto greased cookie sheets. DO NOT USE AIR BAKE PANS. Bake 10 to 12 minutes, until done. Cool on cooling racks.

6When cookies are cooled mix together margarine, brown sugar, and milk, add powdered sugar to make a thin easy to spread frosting. Frost cookies. Store in air tight container in cool spot.
