We couldn't wait to try this cookie as soon as it came out of the oven. All the great tastes of fall are in this cookie. It's a fluffy, moist cake-like pumpkin cookie that's full of chocolate chunks. They're not strongly pumpkin spice flavor. Just the spices that are mixed in with the pumpkin pie filling. It's a great balance of flavor. How To Make pumpkin chocolate chunk cookies

1Beat together the pumpkin pie mix, egg, vanilla, and oil.

2Beat in the sugar.

3Add flour, baking powder, dissolved baking soda, salt, and cinnamon. Mix well.

4Fold in chocolate chunks.

5Drop cookies onto lightly greased cookie sheet.
