I've had this recipe for many years, and they've always been a big hit. These bars are easy to make and are a delicious alternative to pumpkin pie, especially after a big holiday meal.

Ingredients For pumpkin cheesecake bars

  • 1 can
    16 oz pound cake mix
  • 3
    eggs
  • 4 tsp
    pumpkin pie spce
  • 2 Tbsp
    margarine, melted
  • 1 pkg
    8 oz cream cheese, softened
  • 1 can
    14 oz eagle brand milk
  • 1 can
    16 oz pumpkin (2 cups)
  • 1/2 tsp
    salt
  • 1 c
    chopped nuts

How To Make pumpkin cheesecake bars

    Preheat oven to 350. In large bowl, on low speed, combine cake mix, one egg, margarine and two teaspoons spice until crumbly.

    Press onto 15" X 10" jellyroll pan and set aside.

    In large bowl, beat cream cheese until fluffy. Gradually beat in sweetened condensed milk, then two eggs, pumpkin, two teaspoons spice, and salt. Mix well. Pour over crust. Sprinkle nuts on top.

    Bake 30 to 35 minutes or until set. Chill. Cut into any size bars. Store in refrigerator.
