Ingredients For pumpkin bars

  • PUMPKIN BARS:
  • 1 can pumpkin, 16 oz
  • 1 can sweetened condensed milk
  • 1/2 cup sugar
  • 3 eggs
  • 1 t. cinnamon
  • 1 pkg. white cake mix, 2 layer size
  • 1 cup chopped pecans
  • 1/2 cup (1 stick) butter, melted
  • FROSTING:
  • 8 oz. cream cheese, softened
  • 8 oz. whipped topping
  • 1 cup powdered sugar

How To Make pumpkin bars

    For pumpkin bars, line a 9 x 13 inch baking pan with waxed paper. Mix the pumpkin, condensed milk, sugar, eggs and cinnamon in a bowl until smooth. Pour into the prepared pan. Sprinkle with the cake mix and pecans and pat into the pumpkin mixture. Pour butter over the top. Bake at 350 degrees for 50 to 60 minutes. Cool in the pan for 5 to 10 minutes Invert onto a tray and remove waxed paper. For the frosting, beat cream cheese, whipped topping and powdered sugar in mixing bowl until smooth. To assemble, spread frosting over the cooled pumpkin layer. Cut into bars to serve. Freeze bar cookies for 10 minutes before cutting for clean edges. Serves 15
