Enjoy these banana bars for breakfast, afternoon tea, or any time you want a great-tasting snack. They're sweet, soft, and moist. Sort of a twist on banana bread. with a hint of apricot (from the apricot preserves). They have a slight crunch from pecans. Try them with or without the vanilla frosting... they're good both ways.

Ingredients For preserved banana bars

1/2 cbutter, softened

1 cbrown sugar

10 ozapricot preserves

2 lgeggs, beaten

1 tspvanilla extract

1 3/4 call-purpose flour

1/2 tspbaking powder
-
1/2 tspbaking soda
-
1/4 tspsalt
-
3 mdbananas, mashed (1 cup)

1/2 cnuts
- OPTIONAL VANILLA FROSTING

1/2 cbutter, softened
-
1 1/2 cpowdered sugar

3 Tbspheavy cream
-
1 tspvanilla extract
How To Make preserved banana bars

1Preheat oven to 350 degrees F. Cream together butter and brown sugar.

2Add preserves, beaten eggs, and vanilla extract.

3Combine the flour, baking powder, baking soda, and salt in a separate bowl.

4Add to the creamed mixture.

5Add the mashed bananas and stir well.

6Then add the nuts and stir well.

7Pour into a greased and floured 13”x9” pan.

8Bake at 350 degrees F for 35-40 minutes.

9Cool the bars.

10For the frosting combine softened butter, powdered sugar, heavy cream, and vanilla extract. After the bars have cooled, frost the bars.

11Cut into bars and enjoy.
