These are the tastiest cookies and you can whip them up in no time! Using instant potatoes and biscuit mix -- you can have hot, yummy cookies without all the fuss of measuring!

Ingredients For potato cookies

  • 1/2 c
    butter, softened
  • 1 lg
    egg
  • 1 c
    granulated sugar
  • 1 pkg
    (.5 oz.) instant potato flakes
  • 1 pkg
    (2 oz.) buttermilk biscuit mix
  • 1 tsp
    vanilla extract (or coconut extract)
  • 1 c
    pecans, chopped

How To Make potato cookies

    Preheat oven to 350 degrees. Line cookie sheets with parchment paper and set aside. Cream butter, sugar and egg together until creamy. Slowly add potato flakes and biscuit mix until combined well. Add extract of choice. Stir in chopped pecans.

    Drop by teaspoonfuls on prepared cookie sheets. Bake 8-10 minutes until light brown on bottoms. Remove to wire racks to cool completely. Yield: 5 dozen **This recipe is very easy to double if you have a crowd to feed yummy cookies to! :-)
