Ingredients For pistachio cookies

  • 1 c
    softened unsalted butter
  • 1/3 c
    confectioners' sugar
  • 1
    egg
  • 1 tsp
    vanilla extract
  • 3/4 tsp
    almond extract
  • 2 c
    flour
  • 1 pkg
    instant pistachio pudding mix
  • 1/2 c
    miniature chocolate chips
  • 2 c
    pistachios, finely chopped

How To Make pistachio cookies

    Preheat oven to 350 °
  • 2
    Cream butter and sugar until smooth. Add egg and extracts and mix well. Combine flour and pudding mix and add to creamed mixture. Stir in chocolate chips.

    Shape into 1" balls and roll in chopped nuts. Place 2" apart on ungreased cookie sheets.

    Bake for 10-12 minutes. Remove to a wire rack to cool.
