You can make as few or as many of these as you wish. I have only made this with the "White Bark" or sometimes its called "coating". I feel sure you can use the chocolate type if you had rather. My godmother use to make these for me.

Ingredients For peanut butter "cookies"

1 pkg( or sleeve) of ritz crackers, or equivalent. use two per cookie and make as many as you want.

1 pkgwhite candy coating/bark

waxed paper
How To Make peanut butter "cookies"

1Lay out all your ingredients, and put a sheet of wax paper down to place the cookies on

2Make your "cookies" by placing peanut putter on the cracker and top with another cracker. Make the number you desire.

3Place the white bark in a microwave safe bowl/dish. Start out by cooking on high for 30 seconds. Check it at this point as microwaves differ. You want this to melt, but not burn and not too hot.....just to melted stage. Place back in the microwave for 10-20 second intervals 'til its this consistency.

4Remove dish from microwave and place next to the prepared cookies. Dip each one in the melted mixture. Make sure to coat both sides.

5Place dipped cookie on the waxed paper and allow to dry. Continue process with each cookie you wish to make. You can make the coating as thick or thin as you like.

6Using 3 pieces of the bark/coating, I can make around 5 cookies. An entire package can make around 20 cookies, depending on how thick you want your coating. Note: The coating/bark I get is scored in order to break off one or more at a time. Some packages will also score each block so it can be divided into 2 pieces. This will help if you just need a little more coating once you get going and don't want to melt the entire "block".
