peanut butter cookies

I got a huge craving for peanut butter cookies yesterday and went on the hunt for a recipe. I ended up with a Betty Crocker recipe and these are melt in your mouth GOOD! The recipe calls for 1/4 cup of shortening and 1/4 cup of butter, but I used all butter. These are super easy to make, I didn't even need my mixer! The flavor of peanut butter is just right in these cookies, they are light and just slightly crispy on the outer edges. YUM!!!

Ingredients For peanut butter cookies

1/2 cgranulated sugar

1/2 cpacked brown sugar

1/2 cpeanut butter

1/4 cshortening
-
1/4 cbutter

1egg
-
1 1/4 call purpose flour

3/4 tspbaking soda

1/2 tspbaking powder

1/4 tspsalt
How To Make peanut butter cookies

1Mix sugars, peanut butter, shortening, butter and egg in large bowl. Stir in remaining ingredients. Cover and refrigerate about 2 hours or until firm.

2Heat oven to 375 degrees.

3Shape dough into 1 1/4 inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with fork dipped into sugar.

4Bake 9 to 10 minutes or until light golden brown. Cool 5 minutes; remove from cookie sheet. Cool on wire rack.
