Always a big hit at our house. I think they are my favorite. Rolling the tops in sugar keeps the cookies from sticking to the fork or thumb when flattening. I use the thumbprint when I want to put a Hershey's kiss as a topper for special occasions. Either way they are sure to be a big hit with the family.

Ingredients For peanut butter cookies

1/2 cgranulated sugar

1/2 cbrown sugar, firmly packed

1/2 cpeanut butter

1/4 cshortening
-
1/4 cbutter or margarine, softened

1 lgegg

1 1/4 cflour
-
3/4 tspbaking soda

1/2 tspbaking powder

1/4 tspsalt
How To Make peanut butter cookies

1Mix sugars, peanut butter, shortening, butter, eggs til creamy.

2Stir in remaining ingredients.

3Refrigerate for 2 hours until firm

4Form into walnut sized balls and roll tops in sugar. Flatten with fork in traditional pattern or press thumbprint.

5Bake at 375 degrees for 9-10 minutes.

6Remove from oven and allow to cool slightly. Remove from cookie sheet to rack or parchment paper to cool. Add Hershey's kiss if desired.
