I created this recipe to be easy. I wanted it to be easier than making cookies. The result became a bar cookie. They are a cross between a bar cookie and a brownie. These bars were very well received in my home. They are not dry at all. They have a nice subtle chewiness, and the top has a little crispiness. These would be great to bring to a party, dessert, or snack. Enjoy!

  • 1 1/3 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1/4 tsp
    salt (omit if using salted butter)
  • 3/4 c
    smooth peanut buttet
  • 1/2 c
    softened butter
  • 3/4 c
    light brown sugar packed
  • 1/2 c
    granulated sugar
  • 1 lg
    egg
  • 1 lg
    egg yolk
  • 2 tsp
    vanilla extract
  • 1 c
    chocolate chips
  • 1/2 c
    nuts optional

How To Make peanut butter chocolate chip bars by nor

    Pre heat oven to 350° Grease a 9x 9” or 8”x8” Square metal baking pan . You may use a glass pan as well. It may take five minutes longer to bake using a glass pan.

    In a large bowl. Whisk together the flour baking powder and salt. Set aside.

    In another large bowl. Beat together peanut butter, butter, brown sugar and granulated sugar. Mix until smooth.

    Add in the eggs one at a time. Beat on low between additions. Do not over beat. Beat until incorporated.

    Add in the vanilla extract. Beat on low until combined.

    Add flour mixture in thirds. Mix in between each addition of flour. Mix until combined well. Add in the chocolate chips and nuts and mix until combined.

    Press dough into square baking pan. Bake approximately 30 minutes. Toothpick should come out clean or with a couple of crumbs on it. Do not overbake. Over baking could cause the cookie to be dry.

    Remove from oven. Let brownies cool. Cut into squares.
