Went to make Small Batch Lemon Ricotta Cookies and realized that I did not have a lemon. Substituted orange. Great choice.

Ingredients For orange ricotta cookies

  • 1 c
    flour
  • 1 tsp
    baking powder
  • 1/2 c
    sugar
  • 1/3 c
    butter, softened
  • 1 tsp
    orange zest
  • 1/2 c
    whole milk ricotta
  • 1 lg
    egg
  • 1 Tbsp
    orange juice, fresh
  • GLAZE
  • 1 c
    powdered sugar
  • 2 Tbsp
    orange juice
  • 1 tsp
    orange zest

How To Make orange ricotta cookies

    Line baking sheets with parchment paper.

    In medium bowl, whisk together flour and baking powder. Set aside.

    Beat together sugar, butter and 1 teaspoon of orange zest until light and fluffy.

    Beat in ricotta, egg and 1 tablespoon of orange juice until well combined.

    Add in the flour mixture and mix until combined.

    Cover the dough and refrigerate for at least 2 hours.

    Preheat oven to 350 degrees.

    Measure 1 tablespoon batter and roll into a ball. Place on parchment lined cookie sheet with 2 inches between.

    Bake for 12-14 minutes.

    Cool 5 minutes on cookie sheet, transfer to wire rack to cool completely.

    Make Glaze: Whisk together powdered sugar, orange zest and juice.

    Drizzle glaze over the cooled cookies.
