orange ricotta cookies
Went to make Small Batch Lemon Ricotta Cookies and realized that I did not have a lemon. Substituted orange. Great choice.

Ingredients For orange ricotta cookies

1 cflour

1/2 csugar

1/3 cbutter, softened

1 tsporange zest

1/2 cwhole milk ricotta

1 lgegg

1 Tbsporange juice, fresh

1 cpowdered sugar

2 Tbsporange juice

1 tsporange zest
How To Make orange ricotta cookies

1Line baking sheets with parchment paper.

2In medium bowl, whisk together flour and baking powder. Set aside.

3Beat together sugar, butter and 1 teaspoon of orange zest until light and fluffy.

4Beat in ricotta, egg and 1 tablespoon of orange juice until well combined.

5Add in the flour mixture and mix until combined.

6Cover the dough and refrigerate for at least 2 hours.

7Preheat oven to 350 degrees.

8Measure 1 tablespoon batter and roll into a ball. Place on parchment lined cookie sheet with 2 inches between.

9Bake for 12-14 minutes.

10Cool 5 minutes on cookie sheet, transfer to wire rack to cool completely.

11Make Glaze: Whisk together powdered sugar, orange zest and juice.

12Drizzle glaze over the cooled cookies.
