Ingredients For old-fashioned pumpkin cookies

  • 2 1/2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1 tsp
    baking soda
  • 1 tsp
    cinnamon, ground
  • 1/2 tsp
    nutmeg
  • 1/2 tsp
    salt
  • 1 1/2 c
    sugar
  • 1 c
    canned pure pumpkin
  • 1 lg
    egg
  • 1 tsp
    vanilla extract
  • CREAM CHEESE FROSTING
  • 1/2 c
    butter, unsalted, room temp.
  • 1/2 c
    cream cheese, room temperature
  • 2-3 c
    confectioners' sugar, sifted
  • 1 tsp
    vanilla extract
  • 1-2 Tbsp
    light cream, opt.
  • IN A MEDIUM BOWL, CREAM BUTTER AND CREAM CHEESE TOGETHER. SLOWLY ADD POWDERED SUGAR AND MIX WITH AN ELECTRIC MIXER UNTIL THICK AND CREAMY, ADD VANILLA. ADD ENOUGH LIGHT CREAM FOR SPREADING CONSISTENCY.

How To Make old-fashioned pumpkin cookies

    Preheat oven to 350° F. Grease baking sheets or line with parchment paper.

    In a medium mixing bowl, combine, sifting together flour, baking soda, baking powder, cinnamon, nutmeg and salt.

    Beat sugar and butter in large mixer bowl until well blended. Beat in pumpkin, egg and vanilla extract until smooth.

    Gradually beat in flour mixture.

    Drop by rounded tablespoon onto prepared baking sheets.

    Bake for 15 to 18 minutes, or until the edges are firm.

    Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

    When cookies are cooled, frost cookies using an offset spatula.
