- CREAM CHEESE FROSTING

1/2 cbutter, unsalted, room temp.

2-3 cconfectioners' sugar, sifted

1-2 Tbsplight cream, opt.
- IN A MEDIUM BOWL, CREAM BUTTER AND CREAM CHEESE TOGETHER. SLOWLY ADD POWDERED SUGAR AND MIX WITH AN ELECTRIC MIXER UNTIL THICK AND CREAMY, ADD VANILLA. ADD ENOUGH LIGHT CREAM FOR SPREADING CONSISTENCY.
How To Make old-fashioned pumpkin cookies

1Preheat oven to 350° F. Grease baking sheets or line with parchment paper.

2In a medium mixing bowl, combine, sifting together flour, baking soda, baking powder, cinnamon, nutmeg and salt.

3Beat sugar and butter in large mixer bowl until well blended. Beat in pumpkin, egg and vanilla extract until smooth.

4Gradually beat in flour mixture.

5Drop by rounded tablespoon onto prepared baking sheets.

6Bake for 15 to 18 minutes, or until the edges are firm.

7Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

8When cookies are cooled, frost cookies using an offset spatula.
