I like oatmeal in baked goods, especially cakes and cookies. Here is a recipe that was handed to me from a dear friend. What made it my own was substituting butterscotch chips for raisins. They come out thin and crispy and they don't last long around my house. I hope you enjoy them as well.

Ingredients For oatmeal scotchies

1 call purpose flour

1 cbutter

1 cbrown sugar, firmly packed

1/2 csugar

3 tspwater

1 tspground allspice

1 tspvanilla extract

1 tspsalt

1egg
-
1/2 tspbaking soda

3 cquick oats (uncooked)

2 cbutterscotch chips
-
3/4 cchopped walnuts (optional)
How To Make oatmeal scotchies

1Preheat oven to 350. Grease cookie sheet(s) and set aside

2In a large mixing bowl, measure out the first 10 ingredients and mix by hand till thoroughly blended. Then fold in the oats and butterscotch chips with a spoon.

3drop dough by heaping spoonfull onto greased cookie sheet about 2" apart. Bake in preheated oven for 12 minutes or till golden.

4carefully cool on a wire rack. Make sure to regrease the cookie sheet each time you use it.
