oatmeal raisinet cookies

Everyone I know, with the exception of a few of us raisin lovers, prefers chocolate chip cookies. To satisfy the cravings for both the raisin and chocolate lovers, I used Raisinets. Yes, chocolate covered raisins. How cool is that! Now, everyone is happy! This is my favorite Oatmeal Raisin cookie recipe. I’ve been making these for over thirty year. I substituted Raisinets in place of raisins. If you want a really yummy oatmeal raisin cookie without chocolate, just use raisins instead of Raisinets. Hope you enjoy!

Ingredients For oatmeal raisinet cookies

1/2 cbutter, room temperature

1/2 csugar

1/2 cbrown sugar, light

1 lgegg

1 tspvanilla

1 call-purpose flour
-
1 cquick cooking oats (do not use instant)

1/2 tspbaking powder

1/2 tspbaking soda
-
1/8 tspsalt
-
1 1/2 craisinets (i used three 3.5-oz boxes)
How To Make oatmeal raisinet cookies

1Preheat oven to 350 degrees.

2Line cookie sheets with parchment paper.

3In a medium size bowl or measuring cup whisk together the flour, oatmeal, baking powder, baking soda and salt; set aside.

4Cream butter, sugar, and brown sugar until creamy.

5Add egg and vanilla; beat until light and fluffy.

6Add dry ingredients; combine thoroughly; stir in raisinets. NOTE: Cookie dough will be stiff. Refrigerate for about 30 minutes. NOTE: Refrigerating the dough is necessary to keep the cookie from being flat when baked.

7Drop cookies on prepared cookie sheets.

8Bake at 350 degrees for 10 to 12 minutes. The cookie should be soft and edges light golden brown. Be careful to not over bake. Remove from oven and cool on cookie sheet for 5 to 6 minutes. Transfer to cookie racks to finish cooling. Store in air tight container.

10Variations: JAMIE'S MINTY OATMEAL WALNUT COOKIES: In place of raisinets, add 8 oz. pack of mint m&m's and 1 cup of chopped walnuts. Thank you Jamie for your wonderful twist on my twist!! You ROCK girl....:)

11DEE DEE'S CHERRY CHIP OATMEAL COOKIES: In place of raisinets, add 1/4 cup chopped maraschino cherries (that have been blotted with paper towels to absorb excesss moisture), 1/2 cup mini chocolate chips and 1 cup chopped walnuts or pecans.
