oatmeal everything cookies

I came up with this recipe when I looked through my baking drawer and saw small amounts of different cookie "add-ins". They travel well and were a big hit when I sent them to a soldier friend in Afghanistan.

Ingredients For oatmeal everything cookies

1 cmargarine or butter, softened

1 cbrown sugar, firmly packed

1 csugar

2 lgeggs
-
1 tspvanilla extract

2 cquick cooking oats
-
2 cflour
-
1 tspbaking soda
-
1 tspbaking powder
-
3/4 tspsalt
-
1/2 cgolden raisins
-
1/2 cdried cranberries
-
1/2 csemi-sweet chocolate chips
-
1/2 cchopped walnuts
-
1/2 ccoconut, flaked
How To Make oatmeal everything cookies

1Beat margarine, sugars, eggs and vanilla for 5 minutes.

2Combine dry ingredients, add slowly to creamed mixture. Stir in fruits, chips and nuts.

3Drop by teaspoons onto ungreased baking sheets. Bake at 350 degrees for 12-14 minutes. Cool on racks. Makes 4 1/2 dozen.

4NOTES: You can use any favorite combination of chips, dried fruit, nuts and/or coconut in these cookies, as long as the total amount adds up to 2 1/2 cups.
