oatmeal cranberry cookies

I adapted several recipes and came up with this, my family in the states loved these, and I made them today, 27 May 2022 here in Thailand, and they are a hit with the family. The photos shown are from when I was in the states.

Ingredients For oatmeal cranberry cookies

  • 2 c
    all purpose flour
  • 1 tsp
    baking powder
  • 3/4 tsp
    salt
  • 3/4 tsp
    ground cinnamon
  • 1/2 tsp
    ground nutmeg
  • 1 c
    butter, softened
  • 1 3/4 c
    brown sugar, packed
  • 2
    eggs
  • 2 tsp
    vanilla extract
  • 2 c
    quick cooking rolled oats
  • 2 1/2 c
    dried cranberries

How To Make oatmeal cranberry cookies

    Preheat your oven to 180° C (350° F). Line two baking sheets with parchment paper or lightly grease with butter.

    In a mixing bowl, add the flour, baking powder, salt, cinnamon, and nutmeg. Whisk together then set aside.

    In another mixing bowl add the butter and sugar and cream together. Add the eggs and vanilla, and mix together.

    Add the flour mixture to the wet mixture and mix together until well combined.

    Add the oats and cranberries and mix together until mixed throughout the cookie dough.

    Drop by heaping tablespoons onto the prepared baking sheet.

    Bake for 13-15 minutes or until the cookies are lightly browned around the edges. Remove from oven and allow to cool on the sheet for 3-5 minutes then remove to a wire rack to cool completely.
