These are VERY good and healthy. I have used different flavors of extract as well and you could also use walnuts or pecans. You can also use 2/3 cup packed dark brown sugar in place of the Splenda mix.

Ingredients For oatmeal cookies

1/2 cwhole wheat flour

1/2 call-purpose flour

1 tspbaking powder

1/3 cvegetable oil

5 TbspSplenda brand brown sugar mix

1 lgegg

1 tspmaple extract

1/2 crolled oats (not quick cooking)

1/2 ccraisins

1/4 cchopped hazelnuts
How To Make oatmeal cookies

1Pre-heat oven to 350 degrees. In a medium bowl whisk together the flours and baking powder, set aside

2In a large bowl whisk together the oil, brown sugar, egg, and extract. Add flour mixture and stir to combine, mix in oats and craisins

3Using 2 tablespoons of dough per cookie, place on baking sheet lined with parchment paper, 1.5 inches apart. Bake until lightly browned, about 15 minutes.

4Cool 5 minutes. These may be stored in an air tight container up to 5 days.
