Oatmeal and Coconut is such a great combination. This is a new cookie I've been making and I make them especially to the coconut lovers I know which includes myself. If I am feeling fancy, I will drizzle melted dark or milk chocolate on top! They're very pretty wrapped in cellophane bags with ribbon, how I usually gift my cookies or sweet treats!

How To Make oatmeal coconut cookies
-
1Preheat the oven to 350 degrees. In a large bowl cream together the sugar, eggs, butter and vanilla until light and fluffy. Add the dry ingredients and mix until combined. Drop by tablespoonfuls onto a parchment paper lined baking sheet. Bake at 350 degrees for 9-11 minutes, until the cookies are set but not overly browned (bake a few minutes longer for a crispier version).

2NOTE: You can stir in m&ms or mini semi sweet or white chocolate chips. I have also added toffee as well to the mix. Enjoy!
