This is very similar to my Peanut Butter Oatmeal Cookies but sans the Peanut Butter. These cookies are great and sometimes I will add about 2 cups of raisins to the mix. Enjoy!

Ingredients For oatmeal chocolate chip cookies

2 cunsalted butter, room temperature

2 cgranulated sugar

2 clight brown sugar

4eggs
-
2 tsppure vanilla extract

5 cblended quick cooking oats

4 cflour
-
2 tspbaking powder
-
2 tspbaking soda

1 tspsalt

24 ozsemi sweet chocolate chips

8 ozchocolate bar grated
-
3 cchopped nuts (your choice, optional)

2 craisins (optional)
How To Make oatmeal chocolate chip cookies

1Preheat oven to 375 degrees. In a mixer, cream butter and sugars until light and fluffy. Add eggs one at a time, mixing until blended. Add vanilla.

2Place 5 cups of oats in a blender or food processor. Blend until oatmeal resembles a fine powder (almost flour-like).

3Put blended oats to a large bowl. Sift in flour, baking powder, baking soda and salt. Mix all dry ingredients thoroughly.

4Working in batches, add dry ingredients to mixer on low speed. Mix until flour is just incorporated, scraping down sides of mixer as needed. Do not overmix.

5Add chocolate chips, grated Hershey bar, nuts and raisins, if using. Mix well.

6Roll batter into 2-inch balls and place on a cookie sheet 2 inches apart. Flatten slightly.

7Bake cookies for 10 minutes or until golden brown. Remove from sheet and place on wire rack to cool.

8Note: To have a consistent size cookie, before rolling, first scoop dough with cookie scooper, then roll dough.
