granola-ish cookies

I wanted something healthier than the usual cookie so I combined a number of recipes to come up with this one...my family loves them!

Ingredients For granola-ish cookies

  • 1 c
    all purpose flour
  • 3/4 c
    whole wheat flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    sea salt
  • 1 1/4 c
    brown sugar, firmly packed
  • 1 c
    (two sticks) butter, softened
  • 1 1/2 c
    granulated sugar
  • 2
    large eggs
  • 2 Tbsp
    milk
  • 2 tsp
    vanilla extract
  • 2 1/2 c
    quick or old-fashioned oats
  • 2/3 c
    wheat germ
  • 3 1/4 c
    flax seeds (ground or whole, depends on how much texture you like)
  • 1/4 c
    sunflower seeds
  • 1 2/3 c
    (12-oz. pkg) semi-sweet chocolate chips
  • 1 c
    coarsley chopped nuts (i omit)

How To Make granola-ish cookies

    Preheat: Oven to 375 F
  • 2
    Combine: Flour, baking soda, salt, wheat germ, flax seed and sunflower seeds in small bowl.

    Beat: Brown sugar, butter and granulated sugar in larger mixer bowl until creamy. Beat in eggs, milk and vanilla extract. Gradually beat in flour mixture. Stir in Oats, morsels and nuts; mix well.

    Drop by rounded teaspoon onto ungreased baking sheets (I use parchment paper) This batter also works very good if refrigerated overnight-it seems to make the cookies easier to shape.

    Bake: 10-12 minutes or longer for crispy cookies. Remove onto wire racks to cool.
