Ingredients For no sugar, lo-carb macaroon cookies
- DRY INGREDIENTS:

8 ozunsweetened, small flake coconut

3/4 csplena for baking

1/4 cerythritol (buy online, or at health food store)

1/4 tspsalt (optional)

4 Tbspsoy flour
- WET INGREDIENTS

4egg whites, slightly beaten

1/2 tspalmond or vanilla extract

1/2 tspliquid stevia (buy online or at healthfood store)

1 Tbspcoconut oil
How To Make no sugar, lo-carb macaroon cookies

1Preheat ovent to 325 degrees.

2Combne dry ingredients and whisk together. In a separate bowl, whisk eggs and add wet ingredients. Add wet & dry ingredients together and mix thoroughly. Shape into 1 inch balls, being sure they are all the same size so they bake evenly. On parchment or silpat, bake 20-25 minutes, rotating trays half-way thru cooking time. Makes about 2 1/2 dozen cookies. Yum!
