Ingredients For no-sugar and gluten-free chewy oatmeal cookies

1/4 cmelted coconut oil

1/3 choney
-
1 lgegg
-
1 1/2 tsppure vanilla extract

1 1/4 cquick oats
-
1/2 cgluten-free flour (i use bob's red mill)

1 tsppumpkin pie spice

1/2 tspsea salt
-
1/4 csemi-sweet chocolate chips (i use sugar-free hersheys)

1/4 cdried cranberries or golden raisins or both
How To Make no-sugar and gluten-free chewy oatmeal cookies

1Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

2In a large bowl, mix together the first 4 ingredients by hand with a wooden spoon.

3Add the remaining ingredients and stir gently.

4Spoon onto prepared baking sheet by tablespoonfuls. Bake 10 minutes, until lightly golden on the outside and set on the inside. Don't overbake.
