No sugar because honey is used, and sugar-free chocolate chips. No gluten either. Chewy and tender, these will soon become a family and friend favorite.

Ingredients For no-sugar and gluten-free chewy oatmeal cookies

  • 1/4 c
    melted coconut oil
  • 1/3 c
    honey
  • 1 lg
    egg
  • 1 1/2 tsp
    pure vanilla extract
  • 1 1/4 c
    quick oats
  • 1/2 c
    gluten-free flour (i use bob's red mill)
  • 1 tsp
    pumpkin pie spice
  • 1/2 tsp
    sea salt
  • 1/4 c
    semi-sweet chocolate chips (i use sugar-free hersheys)
  • 1/4 c
    dried cranberries or golden raisins or both

How To Make no-sugar and gluten-free chewy oatmeal cookies

    Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

    In a large bowl, mix together the first 4 ingredients by hand with a wooden spoon.

    Add the remaining ingredients and stir gently.

    Spoon onto prepared baking sheet by tablespoonfuls. Bake 10 minutes, until lightly golden on the outside and set on the inside. Don't overbake.
