Coconut in lemon bars??? Yes indeed, and I'm not a coconut lover, but these are the exception!

Ingredients For nancy's lemon bars

  • CRUST
  • 1 1/2 c
    flour
  • 1/2 c
    brown sugar
  • 1 stick
    butter, room temperature
  • FILLING
  • 1 c
    brown sugar
  • 1 1/2 c
    coconut, shredded
  • 1 c
    walnuts, chopped
  • 2 Tbsp
    flour
  • 1/2 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1/2 tsp
    vanilla extract
  • 2
    eggs, beaten
  • GLAZE
  • juice and grated rind of 1 lemon
  • 1 c
    powdered sugar
  • 1 Tbsp
    butter, melted

How To Make nancy's lemon bars

  • 1
    Preheat oven to 250. Combine crust ingredients, press in a 9x13 pan. Bake for 10 minutes.

    Add the filling ingredients to the beaten eggs and combine well. Spread over crust and bake for 20 minutes at 350. Cool.

    Mix powdered sugar, melted butter and lemon together. Pour over the filling. Cut into squares.
