My hubby loves coconut, chocolate and pecans. I love to bake and have saw many recipes for cowboy cookies but he is partial and really loves these cookies. I was going to make some to sell and was threatened by him and the kids. His philosophy is "Eat all we can and sell the rest"..Gotta love my cowboy!

Ingredients For my cowboy's cookie

  • 1 3/4 c
    all purpose flour
  • 1 c
    angel flake coconut
  • small pkg
    milk chocolate chips
  • 3/4 c
    roasted pecans
  • 1 c
    quick oatmeal
  • 1 1/2 tsp
    good real vanilla
  • 3/4 c
    crisco shortening, butter flavored
  • 3/4 c
    light brown sugar
  • 3/4 c
    dark brown sugar
  • 2 Tbsp
    milk
  • 1 tsp
    salt
  • 1 lg
    egg
  • 3/4 tsp
    baking soda

How To Make my cowboy's cookie

    First place shortening and sugars in a bowl and mix with a mixer until combined. Add egg,and vanilla mix until blended in. Add milk and mix again just until blended in.

    Sift together salt and flour and baking soda. Mix into wet batter a little bit at a time until all flour is blended in. Toast pecans in a skillet, be careful not to burn. It will only take a few minutes.Allow them to cool completely.

    Using a wooden spoon mix in coconut, pecans, oatmeal and chocolate chips until well mixed. Spoon with a small ice cream scoop or tablespoon unto baking sheet sprayed with non-stick spray or lined with baking liner. Bake in 350 degree oven until edge of cookie is golden brown. Cool on cookie rake. Enjoy
