Mrs. Wolfe was another church lady who influenced me in my early teen years. Her daughter and I were good friends and classmates, and she made some of the best tuna salad anywhere. Her recipe for sugar cookies has always been a favorite in my family. My brother's first comment was, "These cookies are GOOD." Sometimes I sprinkle nonpareils in the dough, especially for holidays. They look festive like that.

Ingredients For mrs. wolfe's sugar cookies

    eggs
  • 2/3 c
    cooking oil
  • 2 tsp
    vanilla extract
  • 3/4 c
    sugar
  • 2 c
    all purpose flour, sifted
  • 1/2 tsp
    salt
  • 2 tsp
    baking powder

How To Make mrs. wolfe's sugar cookies

    Preheat oven to 350 degrees F. In a mixing bowl, beat eggs with a fork. Stir in oil and vanilla. Add sugar, stirring until mixture thickens. Stir in flour, salt, and baking powder until well combined.

    Drop by rounded teaspoons about 2 inches apart on an ungreased cookie sheet. Flatten with greased fork or bottom of glass which has been dipped in sugar.

    Bake about 8 to 10 minutes until light golden brown. Remove immediately from baking sheet to cooling racks.
