These cookie make me think of the famous mountain (Mount Shasta) north of Redding, California. The original recipe called for 1 cup chopped walnuts. They're enjoyable with tea!

Ingredients For mount shastas

  • 1/2 cup
    shortening
  • 1 teaspoon
    vanilla extract
  • 1/2 cup
    sugar
  • 1/2 cup
    packed brown sugar
  • 12
    egg yolk
  • 1 1/2 cups
    sifted flour
  • 3/4 teaspo
    salt
  • 3 TBS
    milk
  • 1
    egg white
  • 1/2 cup
    sugar
  • 1 cup
    flaked coconut

How To Make mount shastas

  • 1
    Cream the shortening with vanilla extract; add the two sugars, beating until fluffy. Add thhe egg yolk, and beat thoroughly.

    In another mixing bowl, blend flour and salt. Add to creamed mixture, alternately with milk, mixing until blended, after each addition.

    Drop by rounded teaspoonfuls onto ungreased cookie sheets; gently flatten slightly. Set aside.

    Beat egg white until frothy. Add 1/2 cup sugar gradually beating until stiff peaks form.

    Top each cookie with a teaspoon of the coconut meringue, you just made, shaping it into a peak.

    Bake at 375 degrees Fahrenheit for 10-12 minutes. Recipe makes 48 cookies!
