My late mil used to make these...they are so easy and just taste delish! Can be frozen, just make sure to put them in something that will keep them flat & seal them well. When you want to serve, put in fridge a while to thaw.

1/3 cbrown sugar, firmly packed

1/3 cbutter, melted

1/2 cchopped nuts

1 ca-p flour

8 ozcream cheese, room temperature

1/4 csugar

1egg
-
1 Tbspbottled lemon juice

2 Tbspmilk

1 tspvanilla extract
How To Make mother-in- law's cheesecake cookies

1Preheat oven to 350°F. Mix crust ingredients together. Reserve 1 cup for topping. Press remaining mixture in bottom of 8" square pan. Bake 15 minutes. Remove from oven and top with cheesecake mixture.

2In medium bowl, blend all the cheesecake ingredients together, mixing well (I use my KA hand mixer). Spoon over baked crust, then sprinkle with reserved crust mixture. Bake 15 minutes longer.

3I have doubled this recipe and baked in a 13"x9"x2" pan without any problem. Crust baking time increases by about 5 minutes, with filling, it's about 10 minutes more in my elec oven...you may have to adjust time in your own oven.
