I found this cute recipe on lilluna.com and just knew I had to make them for my husband to take to work for Halloween! These are easy, tasty and oh-so-cute!! I absolutely love Halloween!

Ingredients For monster eye cookies

1 boxyellow cake mix
-
1/2 cbutter, softened

1/2 tspvanilla
-
8 ozcream cheese (i used neufchatel)

1 lgegg
-
7drops green food coloring
-
2drops yellow food coloring
-
powdered sugar
-
candy eyes
How To Make monster eye cookies

1Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.

2In a mixing bowl, beat butter, vanilla, cream cheese, and egg until well blended and fluffy. Add food coloring. Blend. Stir in cake mix until well blended.

3Roll into 1 inch balls (I used my cookie scooper) and roll in powdered sugar before placing on prepared cookie sheet. (I liked them better when I flattened the dough lightly with my palm otherwise the cookies were really poofy and round instead of flat.)

4Bake in preheated oven for about 10 minutes. remove from oven and immediately lightly press a candy eye into center. Allow to cool completely before removing from pan.
