This is a very old recipe from my Mom. I love how moist they are! The secret ingredient is baby food!

Ingredients For mom's baby carrot bars

1 cgranulated sugar

3/4 tspground cinnamon

1 tspbaking soda

2eggs

1/2 tspsalt

1 tspvanilla extract

1 call purpose flour
-
1 (7 1/2) ozjar baby carrots

1/2 craw carrots, ground
-
1/4 craisins
-
1/4 cwalnuts, chopped
- FROSTING:

12 ozcream cheese, softened
-
1/4 cbutter, softened
-
2 cpowdered sugar
-
2 tspvanilla extract
- GARNISH:
-
grated raw carrot
-
candied or canned pineapple
How To Make mom's baby carrot bars

1Mix all ingredients in a large bowl and place batter in a greased and floured 13X9-inch pan;.

2Bake at 350 degrees for 20 minutes or until an inserted knife or toothpick into the center comes out clean.

3Cool completely.

4Mix all frosting ingredients and frost.

5Garnish each bar with grated carrot & a piece/chunk of pineapple.
