Been making these for years, low sugar substitute for regular molasses cookies and they travel well.

Ingredients For molasses cookies aka mule muffins

1 cmolasses
-
1/2 cmargerine or shortening

1 tspsalt

1 3/4 tspbaking powder

1 tspbaking soda

2 1/2 cflour
-
1 1/2 tspginger
How To Make molasses cookies aka mule muffins

1Heat molasses to boiling and remove from heat.

2Mix in margarine or shortening and soda.

3Sift flour, baking powder, salt and ginger together and mix in.

4Chill dough well.

5Roll these out thin (1/16-1/8")and cut out to desired shape. Place on lightly greased cookie sheet and bake at 350 for 5-7 minutes. Overcooking can result in a slight bitter flavor, but they get eaten just the same.
