Ingredients For mini cheesecake cookie cups

  • 1 pkg
    refrigerated cookie dough (i used toll house chocolate chip but any flavor would work ;)
  • 8 oz
    cream cheese...room temp
  • 2 tsp
    vanilla
  • 1 1/2 c
    confectioners sugar
  • 1/2 c
    cool whip
  • 1 Tbsp
    mini chocolate chips...optional

How To Make mini cheesecake cookie cups

    FIRST SPRAY MINI MUFFIN PAN LIGHTLY WITH COOKN SPRAY...THEN TAKE ALIL SMALLR THAN A QUARTERSIZED PINCH OF DOUGH N FLATTEN THEN PUT INTO MUFFIN CUP PRESSN SLIGHTLY UP SIDES.

    BAKE IN A PREHEATED 350 OVEN FOR 10-12 MINUTES OR UNTIL LIGHTLY BROWND...REMOVE FROM OVEN ... TAKE THE END OF A WOODN SPOON (MINE IS PLASTIC ;) N MAKE HOLE IN CTR ALIL ROUNDER N SLIGHTLY DEEPER FOR FILLN. FYI DONT WAIT TO LONG TO DO THIS STEP AS COOKIE WILL HARDN!

    WHILE COOKIES R COOLN. LETS MAKE THE FILLN...IN MIXER PUT SOFTND CREAM CHEESE N VANILLA N BLEND. ADD CONFECTIONERS SUGAR BY SMALL AMOUNTS N MIXN AFTER EACH ADDITION....UNTIL TOTALLY COMBINED. NEXT FOLD IN 1/2 CUP OF COOL WHIP.

    NOW WE R READY TO FILL THESE MINI COOKIE CUPS...I USED A GRAPEFRUIT SPOON N JUST LET THE FILLN PLOP IN(I BET U COULD FILL A SML PLASTIC BAG N SNIP THE CORNER N USE AS A PIPING BAG )....THEN I ADDED MINI CHOC CHIPS...OPTIONAL ( A SWIRL OF JAM OR GRAHAM CRACKER CRUMBS OR A BLUBERRY , SLICD STRAWBERRY or A CHERRY FROM PIE FILLN ALSO CAN B USED TO TOP EACH BITE .....THE LIST GOES ON N ON ;) REFRIGERATE FOR ATLEAST 1/2 HOUR THEN ENJOY
