maple nut cookies

I came up with this recipe as an after school snack for the kids. They were lucky that there were still some left by the time they got home!!

Ingredients For maple nut cookies

1 cflour(i used white whole wheat)

*1/2 csugar(i used sucanat)

1/2 tspbaking soda

1/4 tspbaking powder

1/4 tspsalt

1/2 csoftened butter(i used half butter/half coconut oil)

1/2 cpure maple syrup
-
1egg
-
1/2 tspvanilla
-
1 ccrispy rice cereal(i used the brown rice variety)

1/2 coats
-
1/2 cfinely chopped nuts(pecans, walnuts)
How To Make maple nut cookies

1Preheat oven to 350F.Combine the flour, baking soda, baking powder, salt and sugar in a small mixing bowl. In another bowl, beat the butter, syrup, egg and vanilla until well combined. Add the dry ingredients to the wet and mix. Stir in the cereal, oats and nuts. Drop onto greased baking sheets and bake 10-12 min. until just starting to brown. Cool on pan 1 min., them remove to racks.

2*When I made these this time, I only used 1/4c of the sugar in an effort to make it a healthy snack. They were still plenty sweet, thanks to the maple syrup!
